dark chocolate chip brownie cookies

Before watching Megamind on Friday evening, Court & I needed a dessert fix. I made  2 giant chocolate cookies that we topped with a heaping scoop of Nestle Real Dairy vanilla ice cream.

Rant: I love the name – “Real Dairy” the first time I saw it in the grocery store, I snickered. It blows my mind that so many food companies actually have to advertise ‘real’ ingredients to set themselves apart from the overly-processed garbage sitting on most grocery store shelves today.

For example…

“made with real chocolate chips”… oh.. great…?

This was almost as annoying as a box of oatmeal cookies advertisting “made with real oatmeal”. Gah.

To make the the brownie cookies, I mixed

1 c whole wheat flour
1/4 c baking cocoa
1/4 tsp salt
1/4 tsp baking soda & 1/4 tsp baking powder
2 large handfuls of dark chocolate chips

wet ingredients:
1/3 cup unsweetened applesauce
a big ‘squirt’ of raw honey
1 egg
1 tsp vanilla

I wasn’t sure if the cookies would bake properly because they were so huge, dense & thick. They turned out perfect though -  moist & fudgey – just like a brownie.

On Saturday morning, I woke up in the mood for waffles. While Court was out getting coffee, I made whole wheat cinnamon waffles topped with buttery brown sugar apples & raisins.

Waffle mix:
1 cup whole wheat flour
2 tsp milled flaxseed
a pinch of salt, baking powder, soda & nutmeg
cinnamon
1 tbsp melted butter
1 tsp vanilla
an egg
approx 1/3 cup milk

While the waffles are in the iron,  sautee a chopped apple in butter for approx 5 mins until they begin to soften.

Add a sprinkle of brown sugar & cinnamon, let brown for a couple  minutes. Turn the heat on low, and add 1/3 cup unsweetened applesauce & a splash of water to keep it from burning. Let the apple sauce simmer until the waffles are done. Stir in raisins.

I gobbled mine up in no time!

It was like eating dessert for breakfast – the only thing missing was ice cream.

Happy Valentines Day!

After work, Court & I are going to celebrate with good food, great wine & leftover red velvet cupcakes. (I saved 2 & sent the rest away…)

I ate a little too much sugar on the weekend, but I’m back on track. I packed myself a nutritious Monday lunch & snacks. In today’s lunchbag I have…


It may look a little boring, but these are the usual snacks I eat during the day. My body craves substantial, nutrient-packed food to make it through a long workday.

My mid-morning snack consists of fruit & greek yogurt, for lunch I’m having a protein packed salad, using leftovers from Saturday’s fish tacos.

I always forget about kiwi – they’re so under-appreciated.

Until recently, I thought I hated coleslaw – as a kid my first experience with slaw was that green sloppy stuff from KFC… it left a bad impression.

To make this salty/sweet combo, I used cabbage, celery, gala apples, raisins, tuna & little bit of light mayo. Then I seasoned it with sea salt & pepper.

In case I get the munchies after my snacks are gone, I keep a stash of walnuts, almonds, spelt cakes & raisins at my desk.

I’m excited to see what Court has planned for tonight – it’s our first Valentines Day as an old married couple. We might try a new position tonight – watching tv on a giant blanket bed on the floor, instead of the couch.

Early Valentines

Last weekend, Court & I shared a delicious meal with my parents. My mom loves entertaining her kids & she cooked up a hearty meal of bowtie pasta dressed in olive oil, bacon, capers & lemon (SO GOOD), along with creamy baked tomatoes & cheese, chicken & salad. I was so busy inhaling my meal I forgot to take pictures. For dessert we had a layered banana split ice cream sitting atop a sweet’n'salty graham cracker crust. Droooool.

My mom still gives us Valentines day presents – Court got some lotto tickets & Sunkist candies. She gave me a beaded necklace & a “healing” bracelet. I don’t really believe in the supposed healing powers of stones, but I like the idea of it!

I also enjoyed a visit with my lovebird, Oliver. He stayed with my parents while I was recovering from surgery & he’s going to stay with Grandma for a while longer…. ok, forever. My mom really loves him & he seems much happier being at their place. 

Oliver LOVES being with people – he’s not bonded to one person like most birds are. Since Court & I work full time, we don’t have a ton of time to dedicated to entertaining him. My dad works from home & my Mom likes to baby him so it’s a win-win for everyone.

KISS ME. Hahaha

I love birds, but I wouldn’t own another one. They require so much one on one time for their emotional well being, otherwise they develop destructive behaviors. I don’t believe parrots should be kept as pets.

crunchy peanut butter chip cookies

Whoever invented the peanut butter/chocolate combo deserves a Nobel prize. I can’t imagine there’s anyone out there who doesn’t love peanut butter chocolate chip cookies… it’s not possible. Nope. It’s like not wearing jeans… or liking pizza.

Last night my Dad asked me how I’m not obese from all the baking & eating I do. I enthusiastically explained my baking substitutions – cutting way back on sugar, or using honey as a sweetener, whole wheat flour, oats, etc.

Here’s a healthier version of the PB/chip classic

Dry ingredients
3/4 cup whole wheat flour
3/4 cup oats
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
3/4 cup dark chocolate chips

Wet ingredients
1 cup natural chunky peanut butter
1/2 cup honey
1 egg
1 tsp vanilla

Combine the above & bake at 350F for 10-12 mins until the edges start to brown

I had a wild Friday evening – spent at home, baking a sweet treat for Court & I to share while watching a movie (Conviction, with Hilary Swank)

Feeling an intense dark chocolate craving, I decided on oat cluster cookies, which taste like chocolate heaven, plus they’re high in fiber. The oatmeal packs an additional protein punch too.

Court loved them & they taste even better after they’ve been refrigerated for a few hours. (I ate a couple for breakfast on Saturday morning)

Combine dry ingredients:

3/4 cup oatmeal
3/4 cup whole wheat flour
1/2 cup sifted baking cocoa
1/2 tsp baking soda
1/2 tsp sea salt
1 cup dark chocolate chunks

In a separate bowl, cream together
1/4 cup room temperature butter & 1/3 cup brown sugar
1 egg
1 tsp vanilla
Pour into the dry mixture & mix until well combined

Bake at 350F for approx 10-12 mins. Serve with a small glass of icy, cold milk.
