Pumpkin Pie Oatmeal

Wednesdays are such a useless day. I don’t know why, but I always feel completely burnt out around this time. Tired, lacking energy and appetite with no motivation to exercise. Even though I sit at a desk all day, I feel exhausted by the time I leave work due to the lack of physical activity. Now that the temperatures are rising, I’m going to try to spend my lunch breaks going for a walk. 
This mornings breakfast made me happy

Pumpkin pie-ish oatmeal with a dollop of vanilla greek yogurt
For lunch I had a turkey bagelwich, baby carrots and a cold, juicy sliced orange. 

Dinner made me even happier… we had sushi.

Court and I shared house special, rainbow, spicy salmon and tuna rolls, along with some salmon sashimi. I wish the Japanese restaurants in our city would make brown rice sushi! 
After dinner I tried to work out, but only lasted 15 mins on the elliptical before quitting. So tired. I’m off to relax in a hot shower and hopefully finish reading Mockingjay tonight!

Blueberry Coconut Overnight Oats

Now that the weather is getting slightly warmer, I’ve been cracking the bedroom windows at night. Cool, clean, refreshing air always guarantees me a good night’s sleep!
I started my day with overnight oats, which I made the night before by combining
1/2 c oats
1 tsp cinnamon
1/3 cup water
1/3 cup coconut milk

then placed in the fridge overnight to soak. In the morning, I topped my oats with a spoonful of Smuckers reduced sugar blueberry jam.

 I recently attempted  overnight oats made with Bobs Red Mill 5 grain cereal, yogurt, milk, pumpkin and cinnamon, but I couldn’t get past the gritty texture. Yuck.

I inhaled my lunch today

curried brown rice, peas, broccoli and wild salmon. I didn’t want it to end! For dessert, a pink grapefruit.

Later in the afternoon, I snacked on salsa and brown rice cakes mixed with two Laughing Cow wedges

I love Laughing Cows! I know they’re comparable to Cheez Whiz – a slightly classier version, but I they’re so tasty… and gooey. Don’t judge me.

At dinnertime, I was in a veggie-only mood and loaded my plate with half a baked potato topped with greek yogurt, parsley and green onion, broccoli, asparagus, and sauteed mushrooms drizzled in balsamic.

Cheesey Spinach Muffins

I was in a ‘salty baking’ mood today, which resulted in 

spinach & cheese muffins

To begin, I sauteed 1/3 red onion in a few tbsp of butter
While the onions were cooking, I combined

2 cups whole wheat flour
1 tbsp baking powder
a pinch of cumin & paprika
salt & pepper

In a separate bowl:

1 1/4 cup milk
1 beaten egg
1 cup grated cheddar cheese

handful of chopped spinach

After the onions were done, I added 1/4 cup butter to melt in the pan, then poured the buttery onions into the wet ingredient bowl.

Combine flour mixture with the wet, scoop into a muffin tin and bake at 350 for approx 20 mins.
They’re so good it hurts. Court and I each ate a couple.. I hope we don’t ruin our dinner appetites… Alaskan King crab is on tonights menu!

Sashimi Lettuce Wraps

I ate like a man at lunch today. First, I started with a chickpea salad topped with basil infused bread crumbs…

Then chased it with an orange, plate of raw veggies, a mini veggie and cheese sandwich along with two bite sized hemp brownies. (There was a potluck at work today)

I was feeling pleasantly full, but lost my willpower and went back to the buffet table for a white chocolate chunk Costco cookie. I LOVE THOSE THINGS. Absolutely, 100%, hands down, my favourite cookie.

Pure heaven, I tell you.

Inspired by the thai lettuce wraps and sushi we had earlier in the week, we decided on sashimi lettuce wraps for Fridays dinner.

Butter lettuce, brown rice, cucumber, avocado, green onion, salmon and tuna sashimi, spicy mayo

Pretty and delicious!

I was still fairly hungry after dinner,  (I went for a run prior) so I made a toasted pb & raspberry jam sani.

… I’m still hungry. Back to the kitchen….
