Vegas Recap – Red Rock Canyon

During my trip to Vegas, I wanted to explore… outside of the city. After getting a little taste of the bright city lights, hotels and casinos I was anxious to take a break from the tourist herds traipsing up and down The Strip.  To balance my over-stimulated senses, I suggested we drive out into the Mojave desert.

Court and I stocked up on multiple bottles of water (you’ll need them!) and drove west of Las Vegas to Red Rock Canyon. Surprisingly, it isn’t that far of a drive – maybe 15-20 minutes from Vdara.  You can either drive through the 13 mile park, or choose one of many hiking trails. We weren’t prepared to do any extreme hiking, especially in the summer.

The Mojave is so beautiful – desert grass, yucca and Joshua trees framed by red rock canyons, sandstone mountains and a crystal clear blue sky.
One thing that really stood out was how quiet it was. No bugs, birds, traffic or people. Even the breeze was quiet. Out in the desert, the sun appeared to be ultra-bright – almost florescent.  Surreal.

While we were exploring the canyons, I kicked off my sandals and climbed around. Under the scorching sun, the sandstone felt incredibly smooth and cool beneath my feet.  I was blown away by the rock formations which were created by ancient sand dunes that hardened over time.  I honestly felt like I was visiting another planet!

Visiting Red Rock Canyon was just what I needed to make me feel grounded again. It’s easy to get caught up in over-indulgences; especially in a hectic city like Vegas. Balance and moderation is key for my well-being!

Vegas recap- Vdara

Court and I just got back from our first Vegas vacation. We were both Vegas virgins and it was nice to experience the city with someone who hasn’t  been before.
Before I planned the trip I wondered if LV was truly a couples destination. Was there going to be anything to do aside from from seeing shows, gambling and partying?  Neither of us are into crowds; our preferred vacation style is relaxing near the water, but I wanted to try something out of my comfort zone.

When it comes planning vacations, I find a few hotel prospects, then obsessively research them on Trip Advisor (my bible). Vdara seemed like a near-perfect fit for us. Located just off the strip, no casino, non smoking. Sold.

We arrived Thursday afternoon via Allegiant and were greeted by a blast of hot desert sun. Court and I are used to a lack of humidity – we live in southern Alberta, but we’ve never experienced dry heat to this extreme. Unreal!

Vdara was everything we hoped it would be – even though it looks massive, it has a boutique type feel to it. Clean and contemporary with a relaxed vibe. We selected a ‘basic’ room with our Allegiant package and were surprised to find a basic room is a suite, complete with kitchen, dining area, living room, king bed, soaker tub and walk in shower. Amazing views too – we asked for a room with a view of the Bellagio fountains and were upgraded at no additional cost. Love.

We spent a lot of time at the pool – with temperatures in the 40s you kind of have to! By Vegas standards, the pool is fairly simple and small, but we enjoyed it nonetheless.  No drinking games (think Cancun) at this place!

Vdara is located in the midst of Aria, The Bellagio and The Cosmopolitan – short walking distance to shopping, fine dining and The Strip.
Would we stay there again? Definitely. Would I recommend it to friends? Yes, for those seeking relaxation and a slightly less-hectic Vegas experience.

cedar plank salmon

After work this afternoon, Court and I kicked off the official first day of summer with a game of frisbee and a walk (still not back to full time running), followed by a bbq…. cedar plank salmon, roasted veggies, salad and rice.

After letting (untreated) cedar soak, pour olive oil & salt onto plank, place salmon on top, season with salt, pepper, dill and lemons.

I harvested my spinach crop for the first time (yay!) and tossed it with cucumbers, red onion and a sweet vinegar dressing.
Dressing: 1/4 c rice vinegar, 2 T olive oil, salt, pepper, pinch of dill, 1 tsp sugar (to take the edge off)

Dessert:

Chocolate Cheerios with unsweetened coconut milk. I had a coupon for a free box – I HAD to try them.

I like them! They’re not too sweet… a perfect bedtime snack.

28hr vacation

I love planning mini trips to the Rockies any opportunity I get.  Sometimes you just need to get out of the city; away from your regular routine.  After work on Friday, Court and I packed an overnight bag and headed to the Crowsnest Pass to meet up with his cousin Chris, and his girlfriend Becky.
We stayed at Chris’s parents cabin, near Coleman.

If your travel agenda is shopping, fine dining within a cater-to-tourist atmosphere, travel to Waterton or Banff. If you want to get away from the usual tourist destinations, look no further.  The historical mining towns (Bellevue, Blairmore, Coleman, etc) are almost identical to mining towns located throughout the Colorado rockies.  I’m fascinated by old mining communities; especially Frank Slide…  it never loses its awe!

When we settled into the cabin, the boys got to work on bbq’ing dinner while Becky and I slaved away over a bottle of wine. Rough life.

Dinner: portebello burgers, salad, roasted veggies and more wine.

After dinner: chatting around the fire, more wine, bed.

I can’t sleep in on weekends and was wide away by 7am. I took a little “me time” to go for a walk before breakfast.

Being in the mountains always recharges my batteries… I feel calm, clear headed, happy and present.

During my walk, I saw two mountain bluebirds! (I’ve never seen them before) They weren’t the cougar I was hoping for, but what can you do….

When I got back to the cabin, everyone was still sleeping, so I lied to Court and told him it was 10am (it was 8) He didn’t notice the real time until we were in town getting coffee!  I love me.

If you’re ever visiting the Pass, you MUST stop by Cinnamon Bear Bakery & Cafe.

It’s my favourite bakery! They have fresh cookies, squares, cakes, sandwiches, etc. On a ‘normal’ visit, I typically order 3-4 treats, but since it was 8:30am, I just  had a coffee. Court “needed” a cinnamon bun. If you need something, you gotta have it, right?

I had my eye on a g-free dark chocolate almond biscotti that I promised myself I’d come back for later, but in typical Jo fashion, I forgot.

Build a Better Burger, Pt 2

We added “Salmon and Avocado Omega Burgers” to the “Build a Better Burger” Chatelaine recipe experiment.  They look super fancy, but were messy to eat. Definitely a fork and knife type of burger.

Court and I both agree these would make a fantastic appetizer, served on warm, toasted crostini.

Court got a little fancy and made peach salsa as an alternative ketchup/mustard topping. (I swear he’s the wife in the relationship… NOT that I’m complaining!)

On a scale of 1-10 for flavour: 7. The burgers themselves were a bit flavourless, but the peach salsa saved the day.
Ease of recipe: 9. Because I didn’t have to make it. However, the recipe only calls for 8 ingredients, so I’m sticking with a 9.

Recipe experiment – “Build a Better Burger”

Rogers media gave me a free trial subscription to Chatelaine and my first issue arrived in the mail the other day (side note: Court and I bought our mailman a return to work present; a new mailbox. I hope he likes it!)
The July issue features healthy burger recipes, sides and even d.i.y salsas and bbq sauce.  I LOVE magazines with lots of recipes and just might become a faithful Chatelaine reader.

The recipe experimenting began with  Bison Cherry Burgers with Cucumber Onion salad.

We used sundried tomatoes in place of dried cherries; we were too lazy to make ginger relish, but all in all, the recipe turned out great. I’m not much of a meat person and was more excited about the sides. Especially the cucumber salad (my favourite part), which was sweet, slightly spicy and crunchy.

Sauteed spinach and roasted tomatoes were perfect companions. I forgot to take a picture of the actual burger. Oops.

Would I make it again? Yes.  Since I like to rate my food, I’ll give it a 6.5/10 for flavour, 8/10 for convenience; only a few minute of prep work and no hard-to-find ingredients.

triple berry cobbler

Following my Ladiesfest race on Saturday, I *thought* I did a thorough job of stretching my legs and resting, but apparently it wasn’t good enough, as rigormortis soon set in.  Paaaaiiin. 

I was craving carbs and meat for dinner, and decided on bbq’d soy sauce/garlic marinated chicken and corn, with pasta salad on the side.
For dessert I whipped us up a healthy berry cobbler
Preheat oven to 375F, lightly grease an 8×8 pan
Add berries (I used 1 small carton of strawberries, 1 cup bluberries, 1 cup raspberries)
Lightly drizzle with agave, gently stir in 2 tsp corn starch
To make the topping, combine 
1 cup ww flour
1 cup oats
1/2 tsp soda
1/2 tsp salt
1/2 tsp cinnamon
Stir in
2 tbsp melted butter 
1/3 cup agave (or more if a sweeter topping is preferred)
Pour crumble mixture over berries, bake for approx 20 mins or until golden brown.
Serve with vanilla bean ice cream
On Sunday morning, I woke up feeling like a 96 year old who just underwent a double hip replacement. I’ve never experienced DOMS on this level before. Since I literally couldn’t walk more than a few steps at a time, I sprawled out in a lawnchair with my reader and a couple of ice cold Sol. 
What is it about summer that makes me want beer? I don’t like the flavour, yet I seem to crave it.

Ladiesfest 8k Recap

My gf Serena and I just completed  our *very first race* together!

When I decided to become serious about running and training for my first marathon, I chose Ladiesfest 2011 as my first ‘official’ race.

Under normal circumstances, I  run 3-4 times per week, approx 45-60 mins each run. The past few weeks I’ve been dealing with ITBS, and haven’t been able to run at all. I attempted a few practice runs, and couldn’t make it more than a few blocks without searing pain in my knee.

I wasn’t sure if I’d be able to make it through Ladiesfest, but entered with the hope to at least run the whole thing. I taped the side of my leg, with a brace overtop, to help keep my muscles stabilized.

I started off feeling strong, and wasn’t overwhelmed with trying to keep up with the crowd. It was easy to adjust to a comfortable pace; I made sure not to run too fast or over stride. Must keep IT band happy.

My leg started aching at about the 2k mark, but it wasn’t nagging enough to make me stop. It wasn’t until I hit a steep hill at 7k  that I couldn’t physically handle the pain, and needed a short break. At least 5 mins were lost when I slowed my pace, and ended up walking for a couple minutes. All I could think of was “how the fuck am I supposed to handle a marathon when I can’t even make it up a hill?!” Very frustrating.
After a quick break, I gained my second wind and flew into the finish, at 48:00. Probably my worst time ever but under the circumstances, ok… I guess.

All in all, I’m really happy I made it through the race, and I can’t wait to sign up for more! My Nikes failed me on so many levels and destroyed my feet, leaving me with two massive blood blisters. I’m going to hire my 4 year old nephew to make me a new pair.

peanut butter cookies, two ways

Court has a work bbq planned for Friday evening and requested I bring dessert – preferably cookies. “Don’t worry about making them healthy; none of my coworkers care” he instructed me. Sounds good!  I don’t want to waste my quality ingredients anyways.

First, I made the worlds most unhealthy, artery clogging, diabetes evoking chocolate chip peanut butter cookies. So sinful, yet so delicious. If you have health concerns, this is not the recipe for you.

Cream together:

1 cup butter, softened
1 cup low quality peanut butter (haha)
2 cups sugar (I know….)
1 tsp vanilla
2 eggs

Dry ingredients:
2 cups white flour
1 tsp salt (I would’ve used table salt if I had some)
1/2 tsp baking powder
1 tsp soda
1 cup chocolate chips

Add dry ingredients to the heart attack dough, then drop by the spoonful onto a cookie sheet. The dough is so greasy you don’t even have to form dough balls.  Bake for approx 12 mins at 350F.

I sampled some of the dough, and it was amazing. Butter makes everything taste good.  I’m pretty confident Court’s co-workers will approve – one of them eats m&ms and doritos for breakfast, so this will probably be a step up in comparison.

To balance out the ridiculously unhealthy cookies, I made a batch of vegan peanut butter cookies for myself.

Cream together

1/2 cup natural peanut butter
1/3 cup agave
1/4 cup unsweetened almond milk
1 tsp vanilla

Dry ingredients:

1 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking soda

Add dry ingredients to wet, form cookie dough into balls, and lightly press with a fork. I subbed chocolate chips with cacao nibs.

Bake for approx 10-12 mins at 350F

Heart healthy, waistline friendly cookies.

berry protein pancakes

One of my favourite pancake recipes!

In a food processor, combine

1 c cottage cheese (I use 1%)
1 c oats
4 egg whites (you can omit – I made this version without, but its better with eggs)
1 tsp vanilla
dash of cinnamon

Blend until smooth, cook on medium heat until golden brown

add a layer berries between each cake, then top with a dollop of raspberry jam and a sprinkle of icing sugar

Makes 8 pancakes
