Yesterday morning I woke up in the mood for something sweet and ‘desserty’. A bowl of nectarines and peaches have been ripening on my kitchen counter for a few days, and as luck would have it, they were perfectly ripe when I woke up. It was also my birthday! Yay for July 4th birthdays! Too bad I wasn’t celebrating in the US this year. ( Court and I usually like to celebrate in Whitefish, MT)
My birthday breakfast was SOOO GOOD! I want it everyday. Organic peaches and nectarines are hard to come by in my city so I will have to enjoy them sparingly throughout the summer.
{Healthy} Breakfast Peach Cobber
with homemade almond butter granola
Serves 2
Ingredients/Directions:
Preheat oven to 400F, lightly spray a small baking dish, and line a cookie sheet with parchment paper.
2 peaches, sliced in half and pitted
1/2-1 tbsp butter, melted (or coconut oil. I prefer the taste of butter in cobblers)
1-2 tsp honey (or pure maple syrup)
pinch of ginger
1 cup plain yogurt, divided and set aside
Place peaches into the baking dish. Drizzle with melted butter, followed by the honey and ginger.
To prepare the granola, (which is SO easy, by the way), in a bowl, combine:
1/2 cup rolled oats
1 tbsp chia seeds (or flax, hemp hearts, chopped nuts- or all)
1/4 cup almond butter
1 tbsp pure maple syrup
pinch of salt
dash of cinnamon
Stir with a fork until almond butter and maple syrup are evenly distributed. Toss granola onto the baking sheet, and place into the oven, along with the peaches.
Bake for 18-20 minutes, stirring the granola halfway through. Keep an eye on the granola to make sure it doesn’t burn.
(Note: if the peaches finish before granola (mine were quite small), turn the oven to broil and toast the granola for a minute or two)
Once peaches and granola are done, place the peaches into a bowl, along with 1/2 cup yogurt and 1/4 cup granola.
Opt: grate fresh vanilla bean on top, along with an extra *tiny* drizzle of maple syrup.
Yum! I felt like I was eating dessert for breakfast.
Additional birthday eats and fun:
Veggie Crepe + Vanilla Bean Gelato. Court took me out for lunch and I thoroughly enjoyed my indulgent birthday meal. I loved my crepe! It was packed with eggplant, red pepper pesto, fresh tomatoes, spinach and gouda. My scoop of vanilla bean gelato was wonderful, too. “When did I become so sh***y and start loving vanilla ice cream so much?” I asked Court. “It’s because you’re getting old” he replied. Good talk.
After lunch, I did a quick 30 min workout, then parked myself in lawn chair outside to soak up some D.
Later on, I went to see Ted with Court and my parents. Cake and presents followed.
At my request, my Mom made me a (GF) white cake with fresh whipped cream and strawberries. The cake mix she used was “Celimix” and it turned out awesome. Very similar in texture and flavor to angel food cake. Court also surprised me with a giant cake version of my favorite/beloved ‘Green Fairy’ cupcake from Crazy Cakes.
My outfit matched the cake. Haha. Typical.
I got some fun presents – Essie polish, my favorite ‘Earth Lovers’ watermelon body wash from the Body Shop, some *real* Tupperware, the summer tea collection from David’s Tea, and a few other things.
