After work this afternoon, Court and I kicked off the official first day of summer with a game of frisbee and a walk (still not back to full time running), followed by a bbq…. cedar plank salmon, roasted veggies, salad and rice.
After letting (untreated) cedar soak, pour olive oil & salt onto plank, place salmon on top, season with salt, pepper, dill and lemons.
Roast veggies on bbq while the salmon is cooking.
I harvested my spinach crop for the first time (yay!) and tossed it with cucumbers, red onion and a sweet vinegar dressing.
Dressing: 1/4 c rice vinegar, 2 T olive oil, salt, pepper, pinch of dill, 1 tsp sugar (to take the edge off)
Dessert:
Chocolate Cheerios with unsweetened coconut milk. I had a coupon for a free box – I HAD to try them.
I like them! They’re not too sweet… a perfect bedtime snack.
